Persian Lentil Soup

4 tbsp. oil or butter

1 medium onion (diced)

1 garlic clove crushed

1 1/2 tsp. turmeric powder

3 1/2 cups of lentils (pre-soaked)

1 medium potato (diced)

2 tbsp. tomato paste

4 1/2 cups of water or chicken or beef stock

salt and pepper to taste

lemon juice to taste (optional)

crushed dried herbs

(savoury, angelica seeds) (optional)

chapped fresh parsley (optional)
