Aush is a perfect dish during winter. This is a quick and simple version without any meat. But if you are a meat lover then simply make (Qeema) or (meatballs) and serve with Aush. You can also add Red beans if you like or add any other type of vegetables that you prefer but i like to keep it simple. These herbs give the soup a really rich and delicious flavour. After the soup is all cooked, it is served with a thick dollop of Chakkah (strained yogurt). The contrast of the hot soup with the thick yogurt is heavenly as it makes the soup creamy and also lightens the dish.

1 large Onion
3-4 tablespoons Canola Oil
3 cloves of Garlic
1/2 teaspoon Turmeric powder
8 cups Water
1 cup Lentils
1 cup Chickpea
1 small bunch Parsley
1 small bunch Spinach
1/2 teaspoon Coriander powder
1/2 teaspoon Black pepper
1 teaspoon Salt
250g Persian Reshteh or Spaghetti
3 cups boiling Water
Plain Yogurt or Kashk (chakkah) 2 tablespoons
3 tablespoons Canola Oil
1 teaspoon Dry Mint
1/4 teaspoon Turmeric powder
