Three kinds of rice come from one pot: light, fluffy, buttery white rice; rice flavoured with saffron; and a crunchy fried rice cake (called taydegi or tahdig). For best results, use a good-quality basmati rice. I usually serve this dish with homemade kebab, any meat curry.
