This is not your ordinary meatball. Koofteh is a special type of Persian meatball that's baked in the oven in a special broth. I made my Koofteh using fava beans and fresh dill. However, you can also use dry herbs to save time, but I think fresh herbs give it a much more robust flavor. You can make a variety of different meatballs by substituting just a couple of ingredients. Each Koofteh is full of flavor and absolutely delicious. I know you will enjoy this dish. I kept my meatballs fairly simple, but you can add even more flavor by stuffing each meatball with caramelized onions or barberries! I know you will love this!
