Coconut Curry Noodle Bowl (Vegetarian)

This is a fresh and easy approach to eating healthy! Add whatever combination of veggies you like. I added asparagus,broccoli, mushrooms, onion, shallot, carrots, edamame (not in the shell), mini sweet peppers, and basil on top. You can also add cauliflower or sugar snap peas if you like. Don't be afraid to get creative. If you wish to covert this to a soup, u can add vegetable broth (to keep it vegetarian) or chicken broth. Do this when you are simmering your coconut milk and red curry paste/sauce. You can even add in a Tbsp of peanut butter to your bowl. It blends beautifully with the soba noodles. If your able to find 100% buckwheat soba noodles, this dish can also be gluten free! It's fast, it's easy, it's healthy, and best of all it's delicious! Enjoy!
